Weekly Dinners
What is this page? I made it as a way to motivate myself to cook things that I actually want to eat (rather than really easy recipes). This is less for you readers and more for my own personal incentive, but I hope that it will inspire you to cook things that you enjoy! Ribollita Dinner
This dinner was delicious and pretty easy too. It wasn’t a recipe that I would make over and over, but it was a good recipe to try out on a snowy winter night. If you make this, you can skip the flavored oil, but having some sourdough bread on the side is a must!

Broccoli Quinoa Cakes Dinner
This recipe was great! It was certainly harder to make with the hot oil and delicate nature of the cakes, but they turned out to be tasty falafel-like patties. Like last week, it wasn’t really a recipe that turned out to be one that I loved, but it was an enjoyable dinner for the night.

Cheesy Broccoli Quinoa Dinner
This recipe was delicious, and I might make it again (this is pretty much the greatest honor any recipe could receive)! It was a very passive recipe, which made it pretty easy. The only edit I would make would be to add some extra broccoli. That being said, I am an avid broccoli lover, so if broccoli’s not your thing, you can stick to the recipe. So, I rate this yummy, cheesy, and broccoli-y dinner five stars!

Cheesy White Bean Tomato Bake Dinner
I cheated a bit this week because I decided to make a recipe that had already been done in the family. Even though it wasn’t technically discovering a new recipe, I really liked it. It’s cheesy and flavorful. The recipe doesn’t have a vegetable built-in, but add some broccoli on the side, and yum! I think this recipe is a keeper!

Potato and White Bean Puttanesca Soup Dinner
This week, I made a delicious soup inspired by one of my favorite pasta sauces! I loved the soup, and it pretty much tasted like diluted puttenesca sauce with some vegetables and beans in it. I followed the recipe pretty closely, but I did add extra olives, because why not! I still would prefer puttenesca pasta to this soup, but for a cold night, it was just great.

Vegetarian Burrito Bowl with Avocado Crema Dinner
I loved this recipe! The burrito bowl was good, but the real icing on the cake (or should I say crema on the burrito bowl?) was the avocado crema! It was very tart and tangy, and I felt like it added a lot of flavor to the burrito bowl. The recipe made a lot of crema, so we got to keep enjoying it for the next few days. All in all, this was a delicious recipe!

Chicken Chow Mein Dinner
This recipe was so good! The family approved and said that it was restaurant quality. Believe me, that is a big compliment. The vegetables took a long time to cut, but once everything was prepped, it was pretty easy to throw together. I was a little bit nervous about the chicken, as I wanted to make sure it was fully cooked but not overcooked. However, it wasn’t that hard when it came down to it… maybe all of those cooking shows are getting to my head!

Hibachi-Style Fried Rice Dinner
For fried rice, this recipe hit the nail on the head. It had the right proportions and the sauce was amazing. However, for a full meal, I felt like it was lacking a bit of protein, even though I added in an extra two eggs (What can I say? I like a lot of eggs in my fried rice.). I think that, if I make this again, I would add in tofu or shrimp to beef up the meal… ironically not beef, with a pescatarian in the house. Still, a delicious and easy meal.

Taco Pizza Dinner
Taco and pizza are two amazing things, and this recipe does a pretty great job at combining them both. I really liked this. It was basically a taco in pizza form, and I think it’s a fun and really easy thing to make. I had to make my own refried beans, which was the most work. The one thing to remember is not to skip out on the veggies! The tomatoes and lettuce on top really make the meal.
